At first glance, industrial and craft brewery systems may look similar. Both have mash tuns, lauter tuns, boil kettles, and fermentation tanks. But their design logic, space requirements, configuration, and investment structure are significantly different.

Space Requirements: Compact vs Flexible
Industrial brewery equipment is designed to maximise output per square metre. Key characteristics include larger brewhouse vessels, high-density fermentation tank layout, and centralised piping and utilities. This approach reduces land cost per litre of beer but requires precise planning and strict operational discipline.
Craft brewery equipment, by contrast, usually requires more operational space because tanks are arranged with wider service access, more space is reserved for manual operation and maintenance, and future expansion is often considered from the beginning. While the footprint may be larger, the layout is easier to manage and adapt.
Design Logic: Throughput vs Control
Industrial brewery equipment is engineered around fixed production schedules, minimal process variation, and maximum daily throughput. Once commissioned, these systems are rarely changed and are most efficient when producing the same products continuously.
Craft brewery equipment is designed to support frequent recipe changes, allow manual intervention at key steps, and accommodate a wider range of beer styles. This design philosophy prioritises process visibility and brewer control over sheer volume.

System Configuration: Standard vs Modular
Industrial systems typically feature standardised vessel sizes, integrated automation platforms, and highly structured utility systems. This configuration supports consistent quality at large scale but leaves little room for adjustment.
Craft systems often adopt modular brewhouse and fermentation units, mixed tank volumes, and flexible control systems. For new projects, modularity reduces risk and simplifies phased expansion.
The Critical Difference: Batch Size
Industrial systems typically start at 5 tons or more per batch, with fermentation tanks often exceeding 100 tons. Temperature control on industrial systems is centralised, maintaining ±0.3°C precision.
Craft systems typically range from 100 to 1,000 liters per batch, with independent jacketed temperature control on each tank. Temperature precision is often around ±0.8°C.
That 0.5°C gap may not seem like much. But for an IPA that requires precise ester production, it is the difference between a great beer and a mediocre one.
